Meet the owner

Hi! My name is Erika, and I am the founder and owner of Green Bay Cookie Co.  Green Bay Cookie Co. started out as "The Tattered Whisk" in 2022, as a small custom cookie business out of my basement in Pembine WI.  I was a stay at home mom to my 7 children (yes 7), and decided I needed something for myself, outside of the kids.  So, I had been interested in cookie decorating while pregnant with my twins (my youngest children), so I took a quick online class and  proved to be very good at it.  Soon I had hundreds of cookies and I was like what should I do with all of these? So I started a website, put the cookies into boxes and gave out samples to our school staff.  From there, orders started coming in.

While I started at a custom cookie artist, my business has since grown into large gourmet and stuffed NYC style cookies. We moved to Green Bay in 2024, because my business was just so busy in this area and I could not handle the drive from Pembine any longer.  After the markets ended in Green Bay in September 2024, I found myself in a place where I had a large cookie following, was outgrowing my basement that I had turned into a commercial kitchen space, and just needed a new space to work and sell from.  So, the hunt for a storefront began.  We live in Ashwaubenon, so I hoped to find something close to home, so I can still manage all my kids and their activities.  We found the perfect location, and in December 2024 Green Bay Cookie Co. was formed.
